Texas Beef Skillet

1 lb. ground beef

3/4 cup chopped onion

1 can (16 oz) chopped tomatoes, undrained

1 can (15.2 oz) red kidney beans, undrained

1 cup quick cooking rice (we use regular rice and it works just as well)

1 cup water

3 tbsp. chopped green pepper

1/2 tsp. chili powder

2 tsp. salt

2 tsp. garlic salt or 1 tsp. garlic powder

3/4 cup shredded cheddar cheese

Crushed Frito's (about 1 and 1/2 cups)



In a skillet, cook ground beef and onion till meat is browned and onion is tender. Drain off the fat.

Stir in the undrained tomatoes, undrained beans, rice, water, green peppers,

chili powder, salt, and garlic salt/powder.

Reduce heat and simmer, covered for 20 minutes, stirring occasionally.

Top with cheese.

Cover and heat about 3 minutes or till cheese melts.

Sprinkle corn chips around edge
