Meatloaf



Petite Meatloaf

1 lb lean ground beef

2 eggs, beaten

3 Tablespoons milk

1 Tablespoon mustard

3 cloves fresh garlic

1 small onion, diced

½ Cup grated Parmesan cheese

½ Cup fresh bread crumbs (I used stove top)

½ teaspoon salt

¼ teaspoon fresh cracked black pepper

¼ Cup ketchup

Sauce
1/4 cup of ketchup

2 tablespoons brown sugar

1 tablespoon mustard




1. Gently combine all ingredients with hands into a large bowl until just combined. Form into 6 mini loaves and place onto a lined baking sheet.
2. Combine the ingredients for the sauce. Lightly brush tops with ketchup mixture . Bake at 350 for 20-25 minutes or until cooked through.

Review: This recipe is delicious. I do not care for meatloaf, but this recipe was flavorful and easy to prepare! Will be making it again!

Unstuffed Pepper Skillet Dinner

Unstuffed Pepper Skillet Dinner from Stolen Moments

1 pound ground beef
1/2 onion, diced
2 carrots, diced
2-3 large green peppers, cut into chunks
Salt & pepper, to taste
1 15 oz. can tomato sauce
1/3 c. water
1 t. Italian seasoning
1/2 t. cumin
2 1/2 c. fully cooked rice
1. Brown ground beef and onions in a large skillet. Drain. Add carrots and green peppers. Season with salt and pepper to taste. Cook for 2-3 minutes. You want the peppers to stay somewhat crunchy.

2. Stir in tomato sauce, water, Italian seasoning and cumin. Bring to a slow boil, reduce heat and simmer for 10-15 minutes.

3. Stir in cooked rice until heated through. Top with shredded mozzarella cheese. Serve and enjoy. (Or refrigerate and reheat in oven or microwave just before serving.)

Leftovers of this work great as a burrito filling. Add some chili powder, more cumin and cayenne pepper, roll up in a tortilla and you’re all set

Review: This was a great compromise for our family since DH doesn't like stuffed peppers but I love them, This was simple and tasted great. This dish would make a great weeknight dinner. Make it supper speedy by preparing the veggies ahead of time

Sweet and Sour meatballs

from: My Kitchen Cafe
1/2 pounds lean ground beef (you don't want the beef to be too high in fat because the fat will all pool at the bottom of the baking dish after baking - big time grody-ness in my book)
3/4 cup quick oats
2 eggs, slightly beaten
1/2 cup finely chopped onion
1/2 cup milk
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Worcestershire sauce


Combine all of the ingredients and mix well. Form into about 12 balls, each bout 2 inches in diameter. Place in a casserole dish. Cover with sauce (below). Bake at 350 degrees for about 30 minutes. Serve over rice.

Sauce:
1/2 cup brown sugar
1/4 cup apple cider vinegar
1 teaspoon mustard
1/4 cup barbeque sauce
1 teaspoon Worcestershire sauce

Review: I used bread crumbs instead of rolling oats. The dish was delicious. I recommend doubling the sauce. Quick, and easy!

Cowboy Casserole

From Back on the Ranch In any order that makes you smile toss the following into the crockpot, just be sure and end up with the tomatoes last.

1 onion, diced
6-8 potatoes, diced
2 lbs ground beef or sausage, browned
3 cans kidney beans, drained
1 teaspoon oregano
2 teaspoons dried parsley
1 can diced tomatoes, don’t drain these
1 can (8 oz) tomato sauce
I always like to start my crockpot out on high for the first hour, then turn it down to low if I want. This one takes about 4 hours on high or 6-8 hours on low. Just to get the potatoes tender and blend all the wonderful flavors!

Ground Beef and Potatoe Casserole

Cook Time: 1:
Ingredients:
1 to 1 1/2 pounds lean ground beef, browned
1/2 cup chopped onion
salt and pepper
3 large potatoes, sliced
2 Carrots, shredded
1 can cream of mushroom soup
1 cup shredded Cheddar cheese
Preparation:
Brown ground beef in a skillet with chopped onions; cook until onions are tender. Drain off excess fat; transfer ground beef and onion to casserole dish. Add layer of sliced raw potatoes, sprinkle with salt and pepper; shred carrots to cover potatoes. Put soup over carrots. Bake at 350° for 40 to 50 minutes, or until potatoes are tender. Sprinkle shredded cheese over top and bake for about 5 minutes longer, or until cheese is melted.
This easy ground beef and potato casserole serves 4 to 6.

This was easy, but it was lacking flavor. New recipes are always worth a try though!

Enchilada Stacks

makes 4 small (or 2-3 larger) servings

4 corn tortillas (preferably thicker handmade style)
1/2 pound ground turkey or ground beef
1/2 onion, chopped
1 clove garlic, minced
1 1/2 cup enchilada sauce or chunky salsa
1 can refried beans (or substitute homemade)
1/4 cup shredded cheese

Brown the turkey, onion and garlic in a saute pan. Drain excess fat if necessary. Add the enchilada sauce (I used bottled salsa) and stir to heat through. Spread 2-3 T refried beans on each tortilla. Place one tortilla bean side up in the bottom of a pyrex or corning ware dish with high sides. Spoon 1/4 of the turkey mixture evenly over the beans, spread out to the edges. Repeat with all 4 tortillas stacking the tortilla spread with beans topped by the turkey and sauce mixture. Sprinkle the top of the stack with cheese. To heat through, either bake in a 350 degree preheated oven for about 25 minutes or microwave for about 4-6 minutes on high. The respective ingredients are cooked, so this just needs to be heated through. To serve,cut into quarters.

Review: Quick and easy but a little bland!

Homemade Sloppy Joes

Ingredients:
1/2 pound ground beef
1/2 cup ketchup
2 tablespoons water
1 tablespoon brown sugar
1 teaspoon Worcestershire sauce
1 teaspoon prepared mustard
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
2 hamburger buns, split
Directions:
In a saucepan, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, water, brown sugar, Worcestershire sauce, mustard, garlic powder, onion powder and salt. Bring to a boil. Reduce heat; cover and simmer for 30-40 minutes. Serve on buns. Yield: 2 servings.

Review: I doubled the recipe. It was simpe, but next time I think I'll add some onion and garlic.

Garlic Toasted Spaghetti Bruschetta



Garlic Toasted Spaghetti Bruschetta from Picky Palate


Softened butter
French bread or Ciabatta Bread, cut in half lengthwise
Lawry's Garlic Salt with Parsley
l lb of your favorite prepared spaghetti
Shredded mozzarella cheese

1. Preheat oven to 375 degrees F. Spread butter over cut sides of bread. Sprinkle lightly with garlic salt. Top with prepared spaghetti that's been cut into small pieces with kitchen scissors then sprinkle with shredded mozzarella cheese. Bake for 20 minutes or until cheese is melted and hot. Let cool for 5 minutes then cut into strips. Serve warm.

Review: I added Parmesan cheese on top instead of mozzarella by mistake, but this still tasted great. This is a great way to dress up a classic meal, top off with a green salad and your done!Spaghetti on Foodista

Impossible Cheeseburger Pie

Impossible Cheeseburger Pie from $5 Dinners


Ingredients
3/4 lb ground beef ($1.10)
1/2 onion, finely chopped ($.15)
1 can diced tomatoes, drained ($.23)
1-1/2 cups milk or water ($.25) (I used 1/2 cup rice milk + 1 cup water)
3 eggs ($.33)
3/4 cup Bisquick or GF baking mix ($.75)
1/4 tsp pepper
1/2 tsp salt
1 cup shredded cheddar cheese ($.75) (Omit if GFCFSF)
2-3 lb sweet potatoes ($1.11)

Directions
1. Chop onoins.
2. In skillet, brown ground beef with chopped onions. Drain.
3. Place meat in bottom of a greased pie plate. Add well drained canned tomatoes to the meat and mix through.
4. In medium bowl, whisk milk/water, eggs, flour, salt and pepper. Pour over the meat mixture.
5. Bake at 400 for 25 minutes. Remove and add shredded cheese on top. Bake another 5 minutes. Remove and let cool a few minutes before cutting and serving.
6. Slit sweet potatoes with knife or vent with fork. Bake sweet potatoes at 350 for 1 hour in baking dish with 1/4 inch water. Cover with foil. Remove and let cool about 10 minutes. Peel skins off of the potato and mash. Serve with cinnamon and butter if you like. We eat them “plain”.
7. Serve cheeseburger pie with a side of mashed or baked sweet potatoes.

Cost $4.67

Review: This tasted ok. It lacked a litte more flavor in my opinion. It also made a mess when i add the mix to the meat. It overflowed all over the counter. Came out good though, willing to try it again

Tater Tot Casserole

Tater Tot Casserole

1 lb hamburger meat
1 bag tater tots
1 can cream of mushroom (or chicken)
1 small onion
1 tsp of Worcestershire sauce
1 Tsp of ketchup or BBQ sauce
shredded cheese

Cook & hamburger meat and onion. Drain Fat. Mix with cream of mushroom & Worcestershire sauce and ketchup .
Spread the mixture on the bottom of a 9 by 13 pan.
Cover Meet mixture with Cheese
Cover with a single layer of tater tots.
Cook according to directions on tater tot bag.
Before it’s finished sprinkle with cheese over the top.

Simple weeknight meal, had good flavor but nothing spectacular!

Mushroom Stuffed Burgers
Ingredients:
• 1 1/2 pounds lean ground beef
• 1/4 cup finely chopped onion
• 2 eggs, slightly beaten
• 3/4 cup soft bread crumbs
• 1/4 cup ketchup
• 1/2 teaspoon salt
• 1/8 teaspoon pepper
• 2 tablespoons butter
• 8 ounces sliced mushrooms
• 6 slices Cheddar, Mozzarella, or American cheese
• 6 split buns, toasted
Preparation:
Combine ground beef, onion, eggs, bread crumbs, ketchup, salt, and pepper; shape into into twelve thin (about 1/4-inch thick) patties. In a skillet, melt the butter and sauté the mushrooms until just tender. Place mushrooms on 6 of the patties. Top with remaining patties and seal edges. Broil or grill the burgers to desired doneness. Top each with a slice of cheese and let melt. Serve on split toasted buns.


Review: These were favor flavorful! Yummy! Will be making these again soon!

Pizza Casarole


1 lb. ground beef
1 small onion, chopped
1 green pepper, chopped
1- 8 oz. pkg. spiral whole wheat pasta
2 cups tomato sauce
1 cup cup water
2 t. basil
1 t. oregano
1/2 t. garlic powder
1/4 t. sea salt
4 oz. sliced turkey pepperoni
8 oz. shredded mozzarella or cheddar cheese

optional:
1 small can black olives
fresh sliced mushrooms

Brown meat, onion and green pepper in a skillet. Meanwhile, in a large pot, stir together tomato sauce, water, basil, oregano, garlic powder and salt. Bring this to a boil, then stir in pasta. Boil until pasta is tender. Stir in cooked meat and pepperoni. Combine well. Add olives and mushrooms if desired. Pour into a casserole dish. Top with cheese. Bake uncovered in a 350 degree oven for 25 minutes.

Review: This was Delicious! The sauce had a great flavor! Overall simple, yummy weeknight meal

Beef Enchiladas



1 pound lean ground beef
1 small onion, chopped
1 4 oz can of mushrooms
1 28 OZ Enchilada Sauce Mild by Las Palmas
10 (10 inch) flour tortillas
2 cups shredded Cheddar cheese
2 (2.25 ounce) can sliced black olives, drained

DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
In a medium skillet over medium high heat, cook the ground beef and onion and mushrooms and 1 can of olives until beef is evenly browned and onions and mushrooms are tender.

2.Place 1/4 cup of enchilada sauce into meat mixture. Let simmer for 5 minutes

3.Pour 1/4 cup of the sauce into the bottom of a 9x13 inch baking dish.

4. On each flour tortilla, place an equal portion of the ground beef mixture and about 1ounce of Cheddar cheese, reserving at least 1/2 cup of cheese. Then tightly roll the tortillas and place seam side down in the baking dish.

5. Pour the remaining sauce over the top of the enchiladas and sprinkle with the remaining cheese and olives.

6. Bake in a preheated oven for 20 minutes, or until the sauce is bubbly and cheese is thoroughly melted.

Burrito Bake

Prep Time: 15 min Total Time: 45 min Makes: 6 servings
What You Need1
lb. lean ground beef 1 pkg.
(1-1/4 oz.) TACO BELL® HOME ORIGINALS® Taco Seasoning Mix
3/4 cup water
12 TACO BELL® HOME ORIGINALS® Flour Tortillas
1 can (16 oz.) TACO BELL® HOME ORIGINALS® Refried Beans
1 cup KRAFT Mexican Style Finely Shredded Cheddar Jack Cheese Make It

PREHEAT oven to 350°F. Brown meat in large nonstick skillet on medium-high heat; drain. Add seasoning mix and water. Bring to boil. Reduce heat to low; simmer 10 min., stirring occasionally.

PLACE 4 of the tortillas on bottom of greased 9-inch pie plate. Cover with half each of the refried beans, meat mixture and cheese. Repeat layers once. Top with remaining 4 tortillas.

BAKE 30 min. or until heated through and cheese is melted. Cut into wedges to serve.

To complete this main dish, serve burrito wedges topped with shredded lettuce, chopped tomato and salsa.

Review: Great recipe. Easy and Delicious. As noted this is a Kraft recipe but I often times use other brands of items. We add onion, olives and mushrooms to our meat mixture!

Meatball Sandwich


INGREDIENTS
1 pound ground beef
3/4 cup bread crumbs
2 teaspoons dried Italian seasoning
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
2 tablespoons grated Parmesan cheese
1 egg, beaten
1 French baguette
1 tablespoon extra-virgin olive oil
1/2 teaspoon garlic powder
1 pinch salt, or to taste
1 (14 ounce) jar spaghetti sauce
4 slices provolone cheese




DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, gently mix by hand the ground beef, bread crumbs, Italian seasoning, garlic, parsley, Parmesan cheese, and egg. Shape into 12 meatballs, and place in a baking dish.
Bake for 15 to 20 minutes in the preheated oven, or until cooked through. Meanwhile, cut the baguette in half lengthwise, and remove some of the bread from the inside to make a well for the meatballs. Brush with olive oil, and season with garlic powder and salt. Slip the baguette into the oven during the last 5 minutes of the meatball's time, or until lightly toasted.
While the bread toasts, warm the spaghetti sauce in a saucepan over medium heat. When the meatballs are done, use a slotted spoon to transfer them to the sauce. Spoon onto the baguette and top with slices of provolone cheese. Return to the oven for 2 to 3 minutes to melt the cheese. Cool slightly, cut into servings, and enjoy!

The meatballs had great flavor! I used Hogie rolls instead and still scooped out some of the inside. It was simple delicious. I LOVED these! Did I say they where easy and yummy!

Sailsbury Steak and Oven Fries


• Salisbury Steak I know this recipe came off a blog as I was searching but I didn't write down the link, please let me know if it is yours!

1 lb Lean Ground Beef
1/3 Cup Bread Crumbs or Cracker Crumbs (I used bread crumbs)
½ tsp Salt
¼ tsp Pepper
1 Egg
Small Onion Sliced (I used half an onion) (Optional)
1 Can Condensed Beef Broth
1 – 4oz Can Sliced Mushrooms (Drained) (I left these out)
2 T. Cornstarch
2T Water
1 - Packet Brown Gravy Mix or 1 - Jar/Can Brown Gravy ( I used the mix)

Mix First 5 ingredients together and shape into ovals about ¾ inches thick. Cook patties in a skillet turning once until brown. Add onion, mushroom, and beef broth heat to boiling. Reduce heat cover and simmer for 10 minutes. Remove patties to a casserole dish and keep warm. Heat mixture until boiling. Mix water and cornstarch together to make a paste. Add to boiling mixture with a wire whisk and whisk until gravy begins to thicken. The add 1 packet of brown or mushroom gravy that has been mixed with one cup of water and add to the beef broth gravy. Using the wire whisk again whisk the gravy until it is smooth and thickened. Then pour the gravy over the patties in the casserole dish and bake at 350 until bubbly or put patties in crock pot and cover with gravy and cook on low for 3 hours (I did it in the oven). Serve with rice, mashed potatoes or noodles

2 1/2 pounds baking potatoes
• 1 teaspoon vegetable oil
• 1 tablespoon white sugar
• 1 teaspoon salt
• 1 pinch ground cayenne pepper


DIRECTIONS
1. Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with foil, and coat well with vegetable cooking spray. Scrub potatoes well and cut into 1/2 inch thick fries.
2. In a large mixing bowl, toss potatoes with oil, sugar, salt and red pepper. Spread on baking sheet in one layer.
3. Bake for 30 minutes in the preheated oven, until potatoes are tender and browned. Serve immediately.


The Salisbury steak was extremely flavorful! The sauce was good as well. Overall great main dish. It was however a little more time consuming then first expected. The oven fries were not the right combination of flavors for us. We will not be making the fries this way again.

Porcupine Meatballs


I saw this recipe Business of Feeding a family
1 lb. hamburger
1/2 c. uncooked rice
1/2 c. water
1/3 c. onion, chopped
1/2 tsp. celery salt
1/8 tsp. pepper
1 tsp. salt
1/8 tsp. garlic powder
1 egg
1 (15 oz.) can tomato sauce
1-2 cans of stewed diced tomatoes (not drained)
1 c. water
2 tsp. Worcestershire sauce
Seasonings as desired (oregano, pepper, garlic salt, Tabasco sauce)

Mix hamburger, uncooked rice, water, onion, celery salt, garlic powder, salt & pepper. Add an egg to help hold it all together. Shape into (about 16) balls and cook in skillet until all sides are brown. In a separate bowl, mix tomato sauce, stewed tomatoes, 1 c. water and Worcestershire sauce and pour over meatballs. Heat to boiling. Add desired seasonings. Cover and simmer on low for 45 minutes. (Add water during cooking if necessary.) Serve over cooked rice. Serves 6.

Note: This takes about ½ hour to make and 45 minutes to simmer, so 1 hour and 15 minutes, from start to ready to eat.

This was simple. I did not have onion at home so I left it out. Overall I really liked the flavor of the recipe. Marco didn't really like it, but couldn't describe why. Liliana ate some of it!

Shepard's Pie

8 servings of instant mashed potatoes.
1 onion chopped
2 cloves of garlic chrused
1 pound ground beef
1 can of corn
6 slices American cheese
1 (10.75 ounce) can condensed golden mushroom soup
3 teaspoons butter (optional)

DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C).
Prepare 8 servings of instant mashed potatoes as directed on box
Brown the onion, garlic and ground beef into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain off the grease, then stir in the golden mushroom soup and corn. Transfer to an 8 inch square baking dish, and place the slices of cheese over the meat. Spread the mashed potatoes evenly over the top. Dot with butter.
Bake for 20 to 25 minutes in the preheated oven, or until the top is golden brown.

Review: This was good, but I think the next time I make it I will leave out the corn. Simple . My 2 year old daughter loved it!
