Spinach Lasagna Rolls
Gina's Weight Watcher Recipes



Ingredients:

  • 9 lasagna noodles, cooked
  • 10 oz frozen chopped spinach, thawed and completely drained
  • 15 oz fat free ricotta cheese (I like Polly-o)
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • salt and fresh pepper
  • 32 oz tomato sauce
  • 9 tbsp (about 3 oz) part skim mozzarella cheese, shredded

Directions:
Preheat oven to 350°. Combine spinach, ricotta, Parmesan, egg, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.

Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.

Ladle sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.

To serve, ladle a little sauce on the plate and top with lasagna roll.

 To Freeze: Prepare as stated except do not preheat oven. When ready  to cook defrost and bake at 350 degrees for 40 minutes.If cooking directly out of freezer bake at 350 for 1.5 hours.

Loaded Tortillas

Recipe Yield 4 servings
Ingredients
4 (7 inch) flour tortillas
1 can refried beans
1 packet of Taco seasoning
1 cup salsa
1/2 cup shredded mozzarella cheese
1/2 cup shredded Cheddar cheese
1/3 cup real bacon bits
1/4 cup chopped tomato
1/4 cup chopped red onion
Directions
Place tortillas on an ungreased baking sheet. Mix refried beans and taco seasoning. Spread with beans and salsa. Top with cheeses, bacon, onion and tomato. Broil 4 in. from the heat for 4-6 minutes or until cheese is melted and edges of tortillas are lightly browned.
Review: The mixture had great flavor, my only complaint was that the tortillas were soggy. The soggy tortillas took away from the full flavor of this simple luch dish. I even took another authors suggestions and pre crisped the tortillas. by placing them on the oven rack at 350 degrees for 7 minutes

Cheese stuff shells

Cheese stuff shells



2 eggs
2 containers (15 oz each) ricotta cheese
2 cups (8 oz each) shredded mozzarella. cheese
1 cup Parmesan cheese divided
2 tbsp dried parsley
1 tsp salt and 1 tsp pepper
12 oz jumbo shells (cooked 15 mins and drained)
2 jars of prepared spaghetti sauce
in a medium bowl beat eggs lightly. stir in ricotta cheese mozzarella 3/4c of Parmesan cheese, parsley, salt and pepper.

Spoon about 2 tbsp cheese mixture into each shell. arrange in 13x9 baking dish. top with spaghetti sauce. sprinkle with parm cheese.

bake at 350 for 30 mins makes to 13x9 pans and you can freeze what ever you don't want to cook for another meal. just leave off the spag. sauce when freezing.

Review: These are simple and Delicious! Great with some garlic bread and a green salad!I also use the same filling for manicotti shells!

Quick Pasta Dishes


I tried these two pasta dishes. They were simple weeknight meals, but I would rate neither very highly. I may attempt the Chessy Pasta again with meat

Easy Pasta Bake

8 ounces uncooked pasta
1 jar (1 lb. 10 ounces) garlic and onion spaghetti sauce
1 envelope Italian salad dressing mix (the secret ingredient)
2 cups (8 ounces) shredded mozzarella

Cook pasta according to package directions: drain. In a bowl, combine the spaghetti sauce and salad dressing mix; add pasta and toss to coat. Transfer to a greased shallow 2 qt baking dish. Sprinkle with cheese. Bake, uncovered, at 400 for 15-20 minutes or until heated through. 4 servings.


Cheesy Pasta Casserole (Pictured above)
INGREDIENTS:
• 1 pkg. egg noodles, cooked and drained (or 1 1/2 pkgs spaghetti)
• 1 package ground turkey, chicken or beef, cooked (optional) (we used chicken breasts, boiled then chopped up finely)
• 1 jar tomato sauce
• 1 8oz pkg of cream cheese, softened
• 1 cup sour cream
• garlic salt, pepper, Mrs. Dash
• 1 block of shredded cheddar cheese
Directions:
1. Mix the softened cream cheese with sour cream, seasonings, and tomato sauce together.
2. Place small amount of sauce down in 2 casserole dishes to prevent sticking (I have one 13"x9" and one slightly smaller we use).
3. Place the cooked egg noodles/spaghetti and chopped chicken/beef/turkey into sauce, blending together, then pour into casserole dishes.
4. Cover with shredded cheese.
5. Bake uncovered at 350 degrees for 25-30 minutes.

Product Review spinach and cheese ravioli

Product: Costco's spinach and cheese ravioli
I thought it would be good to do a review of products that are quick and easy to prepare. I recently purchased the Monetary Spinach and Cheese Ravioli at Costco. Must like spinach, more spinach then cheese, but surprisingly enough my husband will eat them so I keep buying them. The raviolis take about 10 minutes to cook and taste delicious with Alfredo sauce. I use the Classico creamy Alfredo sauce that can also be purchased at Costco. This makes a very simple and easy dinner for a relatively good price. 2 packages of pasta is around $10 and the sauce you get 3 16 oz bottles for around $6. Purchasing the Alfredo sauce at Costco saves you about $1.50 per jar.
