Pancake bites

I saw this idea on pintrest and loved it! Their directions where to  use your favorite mix, pour into muffin tins, add fruit, nuts, sausage, bacon... bake 350 for 12-14 min.Here is my  take on this:



Ingredients
5 cups of  krusteaz pancake mix
3 2/3 cups of water
(This made 24 pancake muffins). We had some for breakfast and I froze the remainder to have a quick breakfast on hand). 

Mix In's
1 ripe banana 
1/2 cup strawberries, sliced
1/4 cup mini chocolate chips

Directions:

Preheat oven to 350

Spray muffin tins with cooking spray.

Prepare pancakes according to package directions. (My package of pancake mix simply required mix and water).

Pour 1/4 cup of batter into each segment of muffin pan.

Add your favorite mix in's we used strawberries, bananas  and mini chocolate chips. The pinner on pintrest also used blueberries, sausage and bacon. 

Review: I loved this recipe. Everyone got to eat breakfast at the same time (nobody gets stuck flipping pancakes). This is one of those things that freeze well for those CRAZY weekday mornings. The kids also enjoyed this one because it  was kid friendly and they got to help!

Three Cheese Chicken Alfredo Bake

Three Cheese Chicken Alfredo Bake






Ingredients 
1 (16-ounce) package penne or elbow macaroni
2 (10-ounce) containers refrigerated Alfredo sauce
1 (8-ounce) container sour cream
1 (15-ounce) container ricotta cheese
2 garlic clove, minced
3 cups cooked chicken, chopped
2 large eggs, lightly beaten
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
2 cups mozzarella cheese

Directions
Prepare pasta according to package directions; drain and return to pot.  Stir together all ingredients except mozzarella cheese.  Spread mixture into a lightly greased 13- x 9-inch baking dish.  Sprinkle evenly with mozzarella cheese.  Bake at 350° for 30 minutes or until bubbly.


Review: Cheesy, yummy, and the kids loved it!

Rainbow Pancakes



In honor of St. Patty's day I made rainbow pancakes for breakfast and then the kids and I had fun with the leprechauns.


Rainbow pancakes
Ingredients

pancake mix with ingredients to make - or make your own!
food coloring

Directions

1. make pancake batter according to box directions
2. divide pancake batter evenly into 6 bowls ( I made one batch at a time and divided the batter each time)
3. add a few drops of food coloring to each bowl to reach desired color and stir well
4. heat griddle
5.
6. pour batter on to griddle (one color at a time) and cook until bubbles start to form on the pancake - flip pancake over and continue cooking until done
7. repeat process for each color

Flubber




-1/8 c warm waterfood coloring (optional)
1 c school glue (about 2-1/2 small school bottles)
1 tbsp borax laundry booster (i found it by the OxyClean, it's like $2.00 for a large box)

1. in a bowl mix 2 c warm water, food coloring and glue. stir until glue has dissolved.
2. in another bowl, combine 1/8 c warm water and borax. Stir until borax has dissolved.
3. add borax solution to glue mixture and mix with hands for about 5 minutes (or more).
4. pour out extra water. (if there is some)
5. play with flubber immediately or store in airtight container.

Oh my goodness, Lily enjoyed this activity so much. She was all giggles.

Playdough recipe


Squishiest Playdough Recipe

1 cup flour
1 cup water
1/4 cup salt
2 tsp. cream of tartar
1 Tbls. vegetable oil
food coloring (I used 4 drops)=pastel shade

Just dump all the ingredients into your pot and give them a good stir. (little ones can help with this part

As soon as all ingredients are well combined put your pot on the stove and cook over medium heat, stirring constantly, until it forms into a ball.

As soon as it joins into one big glob, take it off the heat place on wax paper. Wait for it to cool, then knead it a few times until it is nice and soft.

Review: This was the greatest recipe... I even found myself playing with it! It was super squishy and oh so fun!

As stated by as she does it...you can use baby food containers for perfect storage!

Banana Chocolate Chip pancakes

Ingredients
1 cup all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 tsp. Vanilla extract
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed
1/2 cup chocolate chip morsales

Directions
Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together vanilla extract,egg, milk, vegetable oil, chocolate chip and bananas.

Stir flour mixture into banana mixture; batter will be slightly lumpy.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot

Review: This tasted great, I actually made them for dinner for the Kiddos. Lily had been asking for pancakes and became excited to know she can have chocolate with them :)

Mini Caramel Apples

Mini Caramel Apples adapted from Family Fun

Ingredients
1-2 granny smith apples
1 bag of Caramel candies (unwrapped)
2 tablespoons of evaporated milk (water, or milk)
sprinkles, coconut, nuts,nonpareils for decorating


First, cut the lollipop sticks in half at an angle (the pointy end will go into the apple pieces easier). With the melon baller, scoop little balls out of the apple. Each ball should have a section of apple peel. Push half of a lollipop stick into the peel of each ball. Pat the apple pieces dry.

Melt the unwrapped Caramel candy and 2 tablespoons of evaporated milk, milk, or water to the. Dip and swirl the mini apples in the melted Caramel, then roll the apples in nuts, sprinkles, nonpareils, or coconut, if desired. Place the mini apples in paper candy cups or wax paper to set.

French Toast Sticks

French Toat Sticks

2 Eggs
1/2 Cup Whole Milk , Rice or Almond
1/2 Tsp Cinnamon
2 Tsp Honey
Pinch of Salt
5 Slices of Bread, trim edges and cut into 1 inch sticks
1 Tbsp Butter



1. In a shallow bowl, whisk the eggs, milk, cinnamon, honey and salt until combined.
2. Dip each bread stick in the egg mixture until each side is coated with the mixture.
3. Heat a saute pan or griddle over medium heat with 1 tbsp of butter and cook for 3 minutes on each side until golden and cooked through.
4. Serve with honey, maple syrup, or Raspberr-Wee Sauce.

Review: I loved how simple these where and the best part is that my picky three year old loved them too!

Cheese Toast

Cheese Toast from Weelicious

4 Slices of Bread
1/4-1/2 Cup Cheddar Cheese, grated (the amount of cheese depends on the size of the bread)



1. Preheat broiler.
2. Sprinkle about 1 tbsp of cheese (2 tbsp if you’re using a regular slice of bread) on pieces of bread.
3. Place the cheese toasts on a baking sheet and place under the broiler for 1-2 minutes or until cheese is bubbly.
4. Serve.


Review: This recipe reminded me of my own childhood. My mom sprinked garlic salt on the bread and then the cheese Yummy!

Silly Shakes




Ingredients:
½ cup of cold milk
1 tablespoon of any flavor gelatin
(one 3 oz box for every 6 children)
Fruit such as blueberries, strawberries,
grapes or banana slices.

Utensils Needed:
Small bowl
½ cup measuring cup
Shaker or container with airtight lid
Tablespoon
One 8 oz cup per child
1 coffee stirrer or straw per child

Adult Preparation:
Place all gelatin in the bowl
Wash fruit
Place ingredients & utensils in reach of the children

Children Preparation:
Wash hands
Measure and pour milk and gelatin into shaker
Add fruit
Close lid and shake
Pour into 8 oz cups and let children stir
Now let children drink and enjoy

Review: Simple treat, therefore its a keeper!
